Is there an addon or something that allows me to practice me gunnery?

Anything else than the QMB which is awfull imo for this.

If you mean air-to-air, I'd just set up your plane to spawn at the same height as some defenseless JU-52s.

What's wrong with the qmb with respect to that?

You can use the QMB in a couple of ways to practice gunnery. Set up a Friendly second flight using any plane you want. While they won't maneuver or try to evade, you can still use them as targets to get a better feel for what a given plane will look like at different angles and distances through the gun sight. 

 

Or use the QMB to set up unarmed enemy aircraft. Those will maneuver and evade too but obviously can't shoot back. It's like having live target drones to practice on.

I'm going to chime in here and recommend @Stoopy Interactive Playground missions.

 

These have a quite a few challenging air 2 air missions and some ground attack thrown into the mix too. 

 

There are also some drone planes that can be used as target practice and lots of other cool and fun missions in between.

 

You can also rearm/refuel and repair at the base which can help with landing and take off etc.

 

IMO, these missions are so much more engaging than anything the current version of QMB offers.

What I would love to see are some ground targets that are large and red that are easy to see and easy to spot where your bombs/rockets hit. Otherwise, the QMB worked for me to learn the rudiments of gunnery.

I think you might really like the upcoming Moscow Interactive Playground missions that are coming out very very soon.  They make the maximum use of the new exploding trucks.
