Is it possible to have a subtitle shown in cockpit to a single pilot, no one else would see it?

If you mean in MP mission, no. This is for everyone at minimum in the same coalition.

I have no experience with multiplayer mission making, but in SP you could theoretically assign the single pilot to an otherwise unused coalition (e.g. one of the WW1 ones), then show the subtitle and then reassign the proper coalition.

Not want to troll your message @AEthelraedUnraed, but why do you need to do that for SP? (Just personnal interest as campaign maker)

You don't.

 

I just came up with a possible solution to the OP's problem that would probably work in SP (even though you wouldn't need it). MP works differently though so I added the caveat that it's a singleplayer solution and hence won't necessarily work well in MP. (For instance, if you spawn multiple aircraft from a single aircraft object (if that's possible at all), I don't know how to pick the single one that you need.)
