How to you trim the nose up and down on a Spit?

With the default elevator trim commands? Not sure what the question is here.

There are separate key bindings for trims and horizontal stabilizers. Maybe you configured one but not the other.

Not on my gamer pc at the moment, so can't tell you 100% about the Spitfire, because there are some airplanes that do not have any trim. But anyway,

@danielprates already gave you a good hint. Here is a screen shot a made some month ago, because there was some confusion:

There is a pitch trim wheel inside the Spit on the left side. Above it is a sign that says “nose up/nose down.“

Nothing I do with the default commands move the wheel. It’s an animated?  What is the command for this wheel?

you need keys set for elevator trim axis. Because the spit uses a trim wheel you need axis keys set - these can use the same keys as set for elevator trim switch though as therions picture shows above
