How to "Unlock" mouse for cockpit controls?

Recently purchased the game on steam summer sale. I have seen youtube videos of people clicking buttons arround their cockpits to adjust various items, I Want to do this. What do I have to adjust to get this done?

Also, I have screwed wit hsome settings, and somehow my pilot starts with his head hanging out the window. I can fix it but I cant quite get it centered. where I can actually see the aiming pipper in the glass panel

If you've seen "videos of people clicking buttons arround their cockpits to adjust various items", they aren't of BoS/BoM - it has never had this feature.

the switches and toggles are bind-ed to your inputs which when you interact with those keybindings, joysticks button press or from your hotas, yes the animated switch or toggle is enabled in game. 

There is no mouse click in game except for the GUI.
