I've been flying in SP Moscow Campaigns for about a month and noticed I never escorted Ju-87s. Is there a historical reason for this or is it just the RNG playing games with me?

Sure, there was a Ju87, but not the version we have. At that time, they used older versions such as the Ju87-B2
