I can't find a good answer online, and tried saving the weapon preset and guns present both in single player and multiplayer. It saves the ammo type but not convergences.

You have to set it in "Options" -> "Plane" page. Not in multiplayer or single player when mission already loaded. I just removed all my settings. Started game and set convergence to all guns for Beaufighter. All saved to file. But yes. In single player, when mission loaded, they are not saved to user settings template. Those are just for that mission. See, in single player, game loads settings from user settings template and then apply changes from mission (like bombs or what ever author set). So, when you start changing anything after mission loaded it is already different from what you have in your user template in "Options -> Plane". That is why it is not saving back to user template because it is altered by mission settings and no one want to corrupt your personal settings by settings set in single player mission. For some reason same as for single player missions similar happens in multiplayer. Though, I personally think that in multiplayer they should be saved to "user.ini" because it only create new air group with user settings only. There is no mission predefined settings.
