It's possible to have more than one function assigned to a button. For instance in a dive bomber you can have siren and dive brakes together. Also, the game will ignore a function if it is not associated with your current aircraft. For instance you can have landing lights and navigation lights assigned to one button and if the plane you are in doesn't have landing lights the game will ignore that function and only activate the navigation lights. Throttle and super charger or RPM can be on one axis. Siren and dive brakes would both work on the Stuka but in a P38 only dive brakes would work since it doesn't have a siren.

Are you overwhelmed by what the key bindings do, or by what is the best key/axis to assign them to?  There's a lot of how to videos on this forum and YouTube.  In general, functions that you're going to need in a dogfight should probably be assigned to your joystick and throttle (zoom in/out, reload, dump stores, different gun/cannon buttons, etc).  More routine stuff can be on any controller with buttons or axis, like how many bombs or rockets you're going to drop/shoot.  Routine stuff can be, and should be set up prior to your attack.  Practice with different assignments will tell you what you want handy and what can be located elsewhere.
