How were pilots trained to use weapon systems?

 

Did they use simulators and practice on stationary ground targets?

Flight simulators came out in the 1930s.

 

The Link Trainer was used throughout WWII.

Here's the USAAF Fighter Gunnery/Rocket Firing/Dive Bombing training manual from 1945.  Goes into great detail on not only the theory of how to do those things properly, but also aspects of how to train and practice.
