The throttle of the M version is modelled in opposite direction to both other versions, is that correct? In general have the throttle to work like in Spad‘s or Macci (pull to open) or like „usual“ (push to open) ?

Yes. The earlier versions of he iar had "French style " throttle. going the opposite way. One day, in 1942 I think, a German instructor crashed, because he instinctively closed the throttle, when he needed more power. After that all planes on the production line had the throttle reversed, to match the German planes in the inventory. 2

The mixture lever is meant to be set in the middle for the best fuel flow. Setting it full back is just setting it to full lean like in a Spitfire, not idle cutoff. 1
