Do yourself a favor and spend a little time doing quick mission builder flights until you get comfortable flying without the HUD on and just using the plane's own instruments - these planes aren't very complicated so there aren't that many instruments to keep track of, and the immersion of keeping the HUD off is really wonderful.  In the long run, you'll enjoy the whole RoF experience a lot more the sooner you stop using crutches like the HUD.

 

That being said, I'm pretty sure you can turn off just the aiming help by unticking the box in the mission settings, as shown on the screenshot below:

 

 

That's assuming that you are not using mouse control to fly by - in that case, I'm not sure there's any way to get rid of the little circle thing 'cause it's part of how you control where you fly with the mouse (but if you are using mouse control, just don't - spring for a cheap joystick on eBay or something - any joystick is going to be better than mouse control).
