A way to adjust the sensitivity of the rudder axis.

I use CH rudder pedals and wow are they sensitive in this sim just a little bit will throw the plane around way to much. I fly a yak 52 in the real world and yes the rudder is powerful but only beyond half throw in BOS it seems that the rudder is full over at only 1/4 throw.

Under Settings -> Controls -> Plane Controls -> Plane control: yaw on the far right there is a box with a diagonal "S" shaped curve which is the Input responses. If you click on this box you can adjust the sensitivity. I have the same CH pedals and when I adjusted the sensitivity to 50% my rudder response was much better, i.e., less sensitive. You can play around and try to find a sensitivity that suites you best.
