Bringing down flying V1s: I was lured into buying BoN because of the fun flipping over a V1 by winging it over.

But a Spit MkXiV at even over 600 km won't even catch up with one. Any tips?

First tip I’d give you is not to get sucked into legends. Tipping V1s was not common at all. Disabuse yourself of the notion than one can simply sidle up alongside and waggle ones wings at every doodlebug you see. 
 

The most common method was I think to take the radar and  ROC cues and get into a position to drive onto the V1 from 2 to 4 thousand feet above the 1-3 thousand feet it would be at and to maintain your max cruising speed in readiness. Split second timing I guess.  And a 400m min convergence.  Your one advantage is that you should know it’s direction from the contact reports. 
 

A final thought about tipping is the theory that contact wasn’t actually necessary. The airflow at the wingtips would potentially be enough to disrupt the balance if flown by close enough. The thing was giro controlled an so prone to unexpected upsets.  Dunno how well this is modelled in the sim.
