We are already getting the Sopwith Triplane in FC II, I'm pretty sure but the rest we'll have to wait and see... Love all those aeroplanes.

Rumpler C. VII. There is huge Rumpler C.VII shaped gap in current plane set. Everything else is curiosities.

The Fe2 is my favourite. But like the RoF version, I fear it being ruined by the standup-sitdown-standup-sitdown gunner animation.

With that in mind, I think the Nieuport 17 would be my pick.

The AEG GIV is a big dream for me, big twin engine, but was actually used in large amounts for daylight tactical bombing, unlike the gotha and handley page we're getting. Plus look how cute it is!

I would also pay through the nose for a Voisin X. A go cart with wings and a 37mm turreted cannon, what more could anyone dream of?

I'm hoping for FC3, 1916ish plane set.  DH2, Fokker E.III, Nieuport 11 and whatever else to round out a nice plane set.  I still keep RoF installed simply for the occasional DH2 or E.III flight.

IAWTP

The Rubild on Central would be a game changer.

(and obviously the Hanriot HD.1 and the Belgian and Italian front)

Morane-Saulnier L

We need a a slow two-seater for both the Entente and Central powers - one slow enough to be caught by the Airco D.H.2 and Fokker E.III. This is something we desperately needed in Rise of Flight.

Options for slower 'targets':

It is worth noting that some of the German 'B' two-seaters were retrofitted to have defensive (or even offensive guns) so the Aviatik B is an option (along with the Albatros C.I and LVG C.II). The important thing is to pick a design with a top speed of under 135 km/h (so no Albatros C.III or Rumpler C.I)!!

For the Entente, the Caudron G.IV is also an excellent option, with a wide variety of weapon modifications but also slow enough to be caught be the E.III.

However, the Morane-Saulnier L would be a very good choice - since it could act as it could solve the problem for both sides... which makes it highly desirable. It was also used as a fighter aircraft by both sides (and was the first fighter aircraft, as well as the first aircraft to bomb a Zeppelin in flight... and a bunch of other records).

Note: Inclusion of early model Sopwith Strutter or B.E.2b would also help a bit.

Airco DH.5

Definitely a very distinctive and interesting design. IMHO, it would be really interesting to have a pack which contained these types that (much like the Sopwith Triplane) were introduced in 1917 and then withdrawn after a short time.

I'd favour three such aircraft:

Airco DH.5

Morane AI (MS.27/28)

LFG Roland D.II

All were mass produced. All saw brief front-line service. All have interesting handling characteristics.

The Airco D.H.5 has truly exceptional forward visibility and very good wing loading, but was a bit underpowered.

The Morane AI should have truly excellent speed (as good as an S.E.5), very good power to weight ratio (better than an S.E.5) and energy retention. This comes at the costs of relatively lower maneuverability. It is also a parasol monoplane (similar to the Fokker E.V/D.VIII - which would make it an interesting point of comparison).

LFG Roland D.II is the hardest to justify - but out of the German fighters that haven't been modelled it is one of the most produced (only rivalled by the Fokker D.II/D.III). It should have unusual visibility and would be interesting as the fighter counterpart to the LFG Roland C.II.

Just as long as they don't model the structural issues too closely:

"The struts are too weak for the wing loading and the stress!"

Well... I doubt it can be much worse than the Dolphin... and the E.V/D.VIII also had that reputation... besides, it has to have some defect to keep life interesting and balance all of its excellent qualities...
