War Thunder Pilot

I came from War Thunder.  Flew about 110 hours so far in their "simulator" battles -_-

I have Track IR.  I have this joystick.

No rudder pedals.

That said, I have been flying the F-4.  Going up against novice AI....2 at a time.  Fairing well.

I have a few questions.  

What are some basics on setting up sensitivity for my joystick?  I have been messing with it but can't quite get it right.  Any rule of thumb for IL-2?  War Thunder JS setup is completely different so I'm not sure where to start.

Trimming.  I know 109s didn't have aileron trim except on the ground before flight.  But didn't they have elevator trim?  I set my hat switch for trim but it does not do anything.  I'm wondering if I'm just misinformed or not setting it up correctly.  And the 109 pulls up like it's cool.  Hard to keep it level for shots.

I am completely ignorant to engine management besides opening and closing the radiator.  I am looking to fly the F-4 and G-2.  If I'm not mistaken, it does have automatic management for certain things but I would still like to learn prop pitch with throttle management, 

Any help would be greatly appreciated!  I'm looking forward to learning as much as I can.

BF109 uses "Adjustable Stabiliser"

But in the Bf109, instead of a trim tab in the elevator, the whole horizontal stabilizer moves - stabilator - and you can assign the same keys to that up/down setting that you do for the trim tabs working, for instance, on the Russian aircraft.

I did do a search and found some certain things.  Was just wondering if anyone had more specifics.
