I have been looking at various resources online dealing iwth IL2  BOS and have serious confusion.

 

1. the "pitch flaps" that control "nose up" and "nose down"

 

     There is a bit of confusion because some spots insinuate that that is controlled directly by the system with "automatic level flight" mode. While others say that youll crash and burn before you manage to ferry down the run way if you arent manually adjusting it every three seconds. 

 

2. stabilizer bars on german planes.

The “pitch trim” function controls the tendency of your plane to climb or descend. All aircraft in GB except the I-16 have either pitch trim or an adjustable stabilizer. These basically are two different ways of accomplishing the same thing. Trim moves a small tab, an adjustable stabilizer is adjusting the whole elevator. 
A few aircraft have a rudder trim, few have a roll trim. 
The “Auto Level” is an artificial game feature although some aircraft like the bombers did have autopilots.
