Hoping this post gets pinned, as I was frustrated with the amount of digging (not to mention putting a ticket in with 1C) I had to do, to solve my problem as a first time VR and Oculus Quest 2 owner wanting to play non Steam IL2 in VR.
Put 'OpenComposite' into a search in this forum and you'll get a ton of posts, however I have been unable to find a single specific post with the above title.
So, for those (like me) who have recently got the Quest 2 and have the non-Steam IL2 version, you need to go here:

 https://gitlab.com/znixian/OpenOVR/blob/master/README.md

This is a small, free app that emulates Steam VR. You simply run it before you open IL2. Just enabling VR in the IL2 launcher without this, simply will not work - as I found to my annoyance.

Caveat: All I can state is that this worked for me and my set-up.

Thanks for this - I am in exactly the same position.  I also went round the houses to get the thing working.  However I am still waiting for my GPU upgrade (from 1050Ti) to arrive, so when I say working I mean a 10fps, laggy working, so I'll be coming back to this thread to discuss settings etc soon

You could have also just installed SteamVR as the alternative. Stand-alone IL2 works just fine with SteamVR OR OpenComposite.

The Quest 2 will likely cause frustration for some people who buy it to use as PCVR. You'll need to get Oculus Link or Virtual Desktop wireless streaming working and even then... the performance wasn't great for me. I found with my 8700k, 1080Ti and 32gb ram, that the Quest 2 performed and looked worse then my Rift S. There was blurring, smearing and video compression artifacts that simply do not occur with real PCVR.

I still love my Quest 2 - but I'm sticking with my other HMD's for IL2 and VR Flight simming in general.
