Is it normal for @80 missionreport files to be made for each mission? They appear in the data folder

Yep.  For reasons unknown to me the game produces many tiny text files with the mission events.  A long mission can easily break 100 files.

Can those files be deleted? or at least the oldest? they generate too much garbage

Patrick, if the plane fell and exploded on impact on the ground, and the pilot was in the cockpit at the time of the explosion, is this moment reflected in the files? I noticed many times that after the explosion the pilot turns out to be alive, although he must inevitably die.

PWCG deletes the PWCG mission files itself after three missions. The problem is, when you fly other missions like the game's career missions or scripted missions, the game creates for these missions files, too, which don't get deleted by PWCG.

After I submit the combat report I delete the mission files and the mission report files to keep things tidy

I created a file deletion.bat to remove garbage
Change the path to the game to your own, and in the second line change the mission name to your own. Then run this file from time to time, it will clear the trash.
