Rudder bounces around like a paddle ball

I've new at this and I'm at my wits end trying to get some fine control, particularly with the rudder which seems to want to behave like a paddle ball. I've been flying Hurricanes so far and each time I hit the rudder the plane swerves violently and then rebounds back and forth around the original course when released, even slowly. Any rudder input during a aileron movement has a similar effect. The gun sight is all over the place and I can't hit a thing. I've used all the sensitivities and dead zones and trimmed the living daylights out of it, but nothing seems to help. I've watched a bunch of videos and have seen nothing like it. Joystick is a Madcatz F.L.Y. 5 (it has a twist rudder). I've seen other people complaining about what seems to be the same issue, but haven't seen a solution - does anyone have any idea?

Yeah, that isn’t normal. And is not a problem with the game itself.

How does your twist rudder behave under windows after na input? Under joystick configuration I mean.

Does it also behave like that? If so, try recalibrating it.
I‘ve had a single axis on a perfectly calibrated joystick go from 0 to 100% and then 0 at the end (Like a bell curve or a triangle, instead of a positive sloped line) in a single movement that should have been 0-100%. Recalibrating the joystick again solved it.

In game, check the two green bars on the lower right side when assigning the rudder axis. When you move your twist grip the upper bar shows the input and the lower bar the output for the game. How does the upper bar behave? And how does the lower one move?

Sounds like a dead joystick. The electronics inside are messed and send all kind of noisy spike values. My first Logitech 3D Pro made the plane to do kind of breakdance, jiggle randomly on all axes lol.
