I bought before some days Il2 Battle of Stalingrad and I find the game very very nice. Only one thing bothers me. When I make a mission I can only choose between 5 planes and not the whole list of them. Why is this happens? Is it normal? What do I have to do to choose between the whole list of planes?

Short answer is probably buy them.   You can only fly the planes that come with the product that you bought.  Planes that you did not buy you can fly against as AI opponents.

 

Stalingrad comes with 8 planes.  10 if you bought the collectors edition.  Planes are listed here: https://il2sturmovik.com/about/#4 .  That should match the planes that you can play in game.

One good thing about having all the planes available to fly against, is you get to see them up close, along with their options, and decide if it looks like a plane you want to own.
