S!

Keyboard is always on/off so you deflect controls maximum amount when pressing. Only way that might work is that if you tap keys fast, not letting full deflection happen. That joystick will be a good starting point and believe me, there is no end after you get to know what else is out there for sim nuts ?

Playing with a keyboard is near impossible as you might have noticed.

Good on you for getting a joystick! I hear this one is not bad at all.

A Thrustmaster 1600 is a good choice as it has the twist rudder function as well as the other axes.

When you are doing a coordinated turn, you will need to use some rudder at the start to help initiate the turn... in addition to using the ailerons to roll in the appropriate direction and the elevator to vary the angle of attack.

Depends on command used, if he use "Aileron left  (or right) one notch" key  instead "Aileron left (or right)" key - a 0 or 100% command,  the surface command move only a bit in each press, and move progressively if hold this key. In short this "notch" command work like a trim. Work for a casual take-off, circle around and landing, not for fight's.
