I'm not sure this is intentional for the FM, but climbing in the Ju-88 I have throttle set to ~85% for "climb mode."  Between 2000m and 3000m the technochat tells me I'm in continuous power (and throttle seems to only have continuous and emergency/takeoff - > 88%ish).  Once above 3000m it goes back to the normal power bands (cont -> 80%, climb -> 81-87%, emerg 88%-100%).

This values may not be exact, but within a percent or two.

Climb mode requires your pressure between 1.20-1.30ATA and RPM less than 2450 which is not possible in that altitude range. Higher when supercharger changes it is again possible. Throttle movement should not change your RPM setting. Perhaps it does this with some helper mode of the controls.

Exactly.

Differences in engine mode is related to the real parameters, namely manifold pressure, RPM, temperatures and supercharger stage. In case of the Ju88, the manifold pressure will change with altitude because it has a two stage supercharger with a "discomfort zone" between 2000 and 3000m. The % of throttle only gives you the position of your joystick throttle and that's it, so it is not that much related about your current real engine settings.

This is why, once you've learned the basics, it is much more useful to get rid of the technochat and learn how to read the gauges and start to really understand the aircraft you are flying, and therefore fly it more efficiently.

As a bonus, it will also increase immersion !
