Considering visiting Malta, is there much WW2 remaining to see and visit?

I know there is the Gladiator in the museum but as far as visible areas to visit on the island, does much remain to visit and explore?

Depends on your interests. Malta has a densely rich history from prehistoric times, with the Great Siege in 1565 and some Caravaggios.

We visited the underground war rooms where the air defense and the convoys were monitored.

You could always drive around with a map and try to locate where all the WWII airfields were actually located... might be fun

There are a lot of museums relating to WWll.

You could visit Taq'Ali (old RAF base) where there is the Aviation museum. There is the Maritime museum (near the 3 Cities). The  War museum is in Fort St.Elmo. Lacaris Museum is in Valetta, near Upper Barrakka Gardens and they have the Noon day gun there. There is Fort Rinalla where the only remaining 100 ton Cannon is (from the Napoleanic Wars).
I would advise that you visit the Tourist information office in Valleta, They will give you all the information you need. I visit Malta every year (twice) and even stay in the same hotel.
