What can I change in the Advanced Config options to get more missions where enemies show up?

 

Also AI adjustment, is that the skill of enemy AI? default is 0 and AI is way too easy.

So higher number , btter skill?

In partial answer to your question, in Advanced Config you can adjust Flight Opposition Odds (defined as Odds that an enemy flight will directly oppose you).  I think the default is 50.  I'm flying a VVS campaign in May 1943 so I upped it a little bit to 60 which seems to be a good balance between encountering enemy aircraft on my missions or not seeing any enemy aircraft.  By May 1943 the Luftwaffe wasn't as strong on the Eastern Front as it had been earlier in the war.  You can also adjust Max Enemy Flights, Min Enemy Flights, and Max Enemy Planes.  My settings for those are 4, 2, and 8 respectively and they seem to work well for me.

Max enemy flights will increase the odds of an encounter. 

 

Max enemy planes ... maybe.  That parameter describes the maximum number of enemy planes that will spawn.  The beefier your computer, the higher you can set it.  If enemy planes are already on the map but you are not contacting them then increasing this improves the odds of an encounter, as a flight that otherwise  would not have spawned now will spawn.
