Sometimes I login and play there, but after a while get the sensation that my aircraft and the others do things that don't really feel that realistic, flight dynamics wise... I wonder if the sessions hosted at that Server sometimes use the "Simplified Physics" option in the Realism options ?

With low fuel the plane's control surfaces will be slicing that air with authority. Go on a winter map with temperature minus 25 C and you'll see the controls are much slower with the air so thin. The machines go very fast but the control inputs are much less sensitive. 1

The machines go very fast but the control inputs are much less sensitive. The air is actually a lot thicker at -25°C. Increased density also makes controlling hard. (hence why the 109 works so well at high altitude - with lower density it loses its bad handling trades) 1
