A strange question came to my head this morning: let's say i take a fighter for example a Yak and i put on it bombs/rockets. Afrer i release the bombs or shoot the rockets there are "pylons" left under my wings (the things that hold the bombs/rockets, i dont know how they are called correctly). Do they in any way affect my flight characteristics or is it not moddeled in the sim?

Yes they do. From the DD-123:

 

Unlock of additional airplane configuration:

Ammunition mass: 208 kg
Racks mass: 20 kg
Estimated speed loss before drop: 27 km/h

2 x 82mm High Explosive unguided rockets ROS-82
Additional mass: 60 kg
Ammunition mass: 42 kg

For all pylons it is indicated what your speed loss is after the bomb/rocket drop in the list of ordnance available:

Thx guys, didnt notice this in game. I had also heard that if you choose bombs or rockets your plane has better belly armor for ground attack is that true?

It doesn't work that way. There are some aircraft that allow you to slam extra pieces of armor plating on the plane (Bf-110, 109 E7, Ju-87. No Soviet aircraft AFAIK). But you have to select these upgrades manually.
