Airpower with Walter Cronkite. A 1950s TV documentary series.

Hunters in the Sky. Perhaps the last series to feature so many well known WWII Aces from around the world.

A Fighter Pilot's Story. Quentin Aanenson's personal memoirs. Very well done and incredibly moving.

All the Fine Young Men. Story of the USAAF 8th Air Force bomber crews. Again very moving.

The Rocket Pilots. Follows mans first steps towards space.

I've always loved Memphis Belle.  Another good one is Pearl Harbor.  Red Tails if you don't mind Mustangs doing impossible maneuvers and a semi-accurate plot.  Flyboys or The Red Baron if you need a WWI fix.  But both of those are detached from history (i.e. all Fokker Dr.1s in Flyboys are red, whilst we all know there was only one all red triplane).
