I am building my own rudder pedals in laminated metal 3mm thick but i was wondeting....

Should i use stainless steel or iron??

Which would be more resistant?

Please answer considering that im on a tight budget and iron is cheaper.

Thanks!

If your on a budget stick to it. Iron should be fine. Gotta be stronger than the plastic ones. After all what are you planning to do with them?

Stainless steel then, and apply the entire series of corrosion protection methods  - surface treatments, paint, rubber elements between different kinds of metals, careful choice of screws, pins and rods for as little variation as possible on the corrosion scale.
If you get the pieces laser-cut this tells me you want this to be done properly, something to last you a decade or two.

Then consult with someone who not only knows how to weld and drill..., but with someone who has a clue of metallurgy and corrosion prevention.
